Recipes from the Women's Ministry Kick-Off Brunch

Breakfast Sausage Casserole by Shannon Smith

1 Package (16 oz) fresh breakfast sausage, cooked, drained, and crumbled
4 Cups cubed day-old bread
2 Cups shredded Sharp Cheddar Cheese
2 Cans (12 fl. Oz. each) Nestle Carnation Evaporated Milk
10 large eggs, lightly beaten
1 teaspoon dry mustard
ΒΌ teaspoon onion powder
Salt and pepper to taste

Grease 13 x 9-inch baking dish. Place bread in prepared baking dish.

Sprinkle with cheese. Combine evaporated milk, eggs, dry mustard, onion powder, salt and pepper in medium bowl. Pour evenly over bread and cheese. Sprinkle with sausage. Cover, refrigerate overnight.

Preheat oven to 325 degrees. Bake for 55 to 60 minutes or until cheese is golden brown. Cover with foil if top browns too quickly.

French Toast Casserole by Trina Gish

1 stick butter or margarine
11 slices white bread, cubed (including crusts)
2 - 8 oz. blocks cream cheese (I used about 1 and 1/2), cubed
12 eggs (I used 13 to make it a little more moist)
3 tablespoons milk
1/3 cup maple syrup
1 tablespoon powdered sugar cinnamon (extra cinnamon and powdered sugar for top)

Melt butter in 9x13 dish. Cube bread and cream cheese and add to dish.
Stir together eggs, milk, maple syrup, powdered sugar and a few sprinkles of cinnamon.

Pour egg mixture over bread and cream cheese to coat (try to make sure all bread is covered with some egg). Let sit covered in fridge overnight.

Bake at 350F oven for 45 minutes uncovered. Sprinkle
powdered sugar and cinnamon on top and serve with warmed
maple syrup
